The POWER & Heat Transfer Properties of Steam

Unlike all conventional griddles, the Accu-Steam Griddle uses steam to heat the cook surface, resulting in incredibly uniform surface temperatures, near instant heat recovery and edge-to-edge, front-to-back 100% use of the griddle surface. [See User Savings] While steam has been used for years in low pressure direct steaming, typically at 0-15 PSI pressure and in steam jacketed kettles, typically at 25-50 PSI pressure, the 350-400°F temperatures needed for griddle cooking required much higher working pressures and radically new manufacturing methods.

Unique Flat Jacket Pan Bottom Construction

         

AccuTemp manufacturers an incredibly strong flat steam jacket by robot welding hundreds of posts to the top and bottom plate. The resulting post sandwich construction can operate at steam pressures up to 300 PSI, delivering surface cook temperatures up to 400°F. Prior to sealing the jacket, water is added. For an electric unit, heating elements are welded into the jacket and submerged in the water. The elements will heat the water, generating steam in the space just above the water and uniformly transferring heat energy to the top plate, which is the griddle cook surface. Gas units have infrared burners mounted just below the jacket bottom, which heat that water sealed in the jacket, producing the steam.This unique jacket is incredibly strong. Each unit is pressure tested for leaks and structural integrity at 700 PSI, over two times the normal working pressure.
